Description

Viticulture : Vineyard certified organic + biodynamic approach
This cuvée is the symbol of the transmission of the Earth through the centuries and generations of the family, as it comes from a parcel that has been in the family for centuries. As in the days of our ancestors, it has been worked again with horses since 2008, and cultivated organically for 7 generations.
Tirage sous liège: This is a bubbling process carried out after bottling with a cork stopper. This old technique was replaced in the 1950s by the use of a canister (a receptacle for the deposit) and a capsule (to guarantee watertightness). After several years of testing, we found that this method brings advantages to cellar aging beyond 4 years: it prolongs the micro-oxidation of wines initiated in oak barrels, integrates effervescence more harmoniously, and ensures better conservation over time.
Vinification: fermented and aged in oak barrels (from our Ecueil family wood) for 17 months.
Aging: on lees after bottling in February 2014
Limited production: 1,339 bottles / 33 magnums
